Quick and tasty chicken chili
Ingredients:
1 TBS olive oil
3/4 to 1 pound of chicken (chicken breast tenderloins or chicken thigh

meat), cut into bite-sized chunks
1/2 cup thinly sliced white onion
2 cloves of garlic, minced and tasty chicken chiliQuick and tasty chicken

2 tsp ground cumin
1/2 tsp dried oregano
1/2 tsp red pepper flakes (up to 1 tsp if you like it hotter)
2 cans of Great Northern beans, drained and rinsed (reserve about 1 cup

of beans in a separate bowl)
2 small cans chopped green chiles (do not drain)
2 cups chicken or vegetable broth
Water, as needed
salt and pepper, to taste
Method:

1. In a Dutch oven, heat the oil over medium to medium-high heat.

Season the chicken with salt and pepper, then saute in the hot oil
for about four minutes, stirring occasionally.

2. Add onion, garlic, cumin, oregano, and red pepper flakes, then
saute for three 
or four minutes.
3. Add beans, about 1/2 tsp salt, one can of the chiles, and the broth. Heat,
stirring occasionally, until mixture comes to a gentle boil.

4. In a small bowl, mash the reserved beans with the second can of chiles until a

 paste forms, then stir into the chili and simmer for a few more minutes.
Serve topped with sour cream, a sprinkling of cheese, or lime wedges and cilantro.

Just saw the photos taken at the Fall get-together. Good job Shortcake. Everyone looks great as usual. So sorry that Mike and I couldn't make it this time. He missed the BMF golf tournament too because he had to go to Odessa to probate court for his dad's will. Then on the day of the get-together, I had a severe earache that laid me low. Looks like everyone had a great time. Hope to see all in the Spring.

Place: Update on Smokey Kimbrough

Heard back from Larry in Hstn regarding Smokey, below is his response.

"Saw him last week and we had good visit!

He has done well in physical therapy!

He is still @ TIRR---the place to be for his condition!"

TIRR is the Rehab facility.   It's supposed to be the top place for traumatic brain injuries.  It was where Az representative Gabrielle Giffords did rehab.  Keep in mind, with brain injuries like this, it can take a long time for someone to recover.

Tanya - it's been a good 7-8 wks since I got an update on Smokey.  I wd never intrude on his son, dtr or wife's privacy, but was getting my info from 2 of Smokey's closest friends.

Last update said they moved him to a Houston hospital and then into a Rehab facility there in Houston that is well-known for its great care & Drs.  He was still having trouble comprehending things and was still needed more surgeries, but there was some improvement.  I will send an Em to my Hstn contact & see if he has seen Smokey lately.  He had been visiting Smokey regularly in the hospital & at rehab.

I'll let y'all know as soon as I here back!!

Sandy, I have had a lot of friends ask me questions on how Smokey is doing.  If any of your class members have heard how he is fairing, would you post something for all of us to hear how this precious soul of SOC is doing.  So many love and remember him and we respect his privacy, just concerning minds would like to hear if he is progressing well.  Hugs.

I meant to post this yesterday and forgot.  This really made me feel old!

Read in DMN where Paul Revere, of Paul Revere & the Raiders, died Saturday at his home in Idaho.  He was 76!  Although he had cancer and was in his mid 70's he continued to tour with the band until earlier this yr.  They became popular in '63 and had lots of hits.  Memories . . .  an era gone by.

I posted the 22 or so photos taken by Shortcake.  Unfortunately I never picked up my camera much less took a pic!  I'm sorry!  Thank goodness for Shortcake's photos or we'd be . . .  well, you know, picture-less!!!

First of all ...thanks so much for all of the olives at the mini....they were great soaked in vodka!
We have to come up and take mom to the beauty shop Thursday so we are going to the fair then. We have to be in Dallas for a week after that. My sister is going on vacation and I have to be close in case mom needs something. We have visiting Angels staying with her but you never know. We will eat a corn dog, a Belgium waffle with everything on it.....yum. Look at the cars and figure out what is towable behind the RV.

TNX for the tip Jack.  We love going to the bldgs. and usually make all of them.  Not much into the Midway as rides make me sick (motion sickness)!  But I do love the beautiful surroundings, bldgs. and Food!  The Fair is such an improvement of what it was 20-25 yrs ago.  It is so clean and pretty it makes me happy just walking around and looking at everything!

Forgot to tell you about a really cool exhibit we enjoyed. It is in the old Science Place building. It is called Can Construction.  There are these large 3 D displays made of (mostly) cans of food. The Cotton Bowl on UT/ OU game day, Willie's Head, The Alamo, you get the idea. Sometimes the design is hard to see with the naked eye, but if you look through your camera it becomes clear as day. Well worth the time. Saturday there was a guy doing a chalk drawing on the sidewalk leading to the building.

Glad you made it to the Fair, we're trying to figure out which day we can go.  Although it woke me up, glad to get rain!  As Jack said, it is gorgeous outside again!!!  The last 3-4 days have been outstanding!

I didn't like the remake of Big Tex last yr.  He looked out of proportion, boots too high, etc.  But from what I've seen this yr after they made some adjustments and cut down his boots some . .  he looks good!

My "must haves" at the Fair . . .  2 Fletcher's corny dogs, one of the many fried food offerings, funnel cake & a big diet D.P.  What's your diet busters at the Fair?  [smile]
