Comments: JD, we had biscuits & gravy with sausage & eggs yesterday & again this mrng !! As Jack said, the gravy is best when made in the skillet you just made sausage or chicken friend steak in. I've never "warmed" the milk before adding it to my skillet with the browned and thickened grease, but that will work too. But trust me, there is an art to getting the right amount of grease & drippings combined with the right amount of flour and pouring in the milk so it doesn't lump. Comments: While we are talking about gravy recipes, here a good one: Take one filet mignon steak and place in large pot and add the following ingredients. 1 cup vodka 1 cup sour mash whiskey 1 cup gin 1 cup bourbon 1 cup cognac 1 twist of lime (optional) Heat all ingredients until piping hot (do not boil) Throw out the steak, it's ruined. But ooooohhh that gravy! ![]() For more festive occasions, substitute 1 cup champagne for the sour mash whiskey.
Comments: OK, JD. Print the page or write it down and put in a safe place. In a heavy, 2 quart saucepan, heat 3 cups of milk BUT DON'T LET IT BOIL. Use a skillet ( hopefully where you have just cook a chicken fried steak) put 4 or 5 tablespoons of grease. (better if you use that much left over from cooking the steaks) Over medium heat, heat the grease and add 3 tablespoons of flour, 1 tablespoon at a time. Continue stirring to brown flour. When brown, hot and bubbling, add hot milk. Stir constantly until thick and creamy. Add 1 & 1/2 teaspoon slat and 1 teaspoon pepper or season to taste. There it is.....DON'T BURN IT. Enjoy.

Comments: Some things in Life are a disappointment, while others surpass expectations. Take yesterday, for instance: Dru and I concluded the day watching the George Clooney movie, Michael Clayton. For all the hype it garnered during the Oscars, the movie was grim and mostly a let-down. At the other end of the spectrum, we met Dale and Yuvonne Smiley for lunch at nearby Pallotta's Italian Grille. A couple of hours flew by all too fast and we had a grand time swapping yarns about Oak Cliff, the world of public education, and the highs and lows of parenthood. Pretty cool.
